Temperature Potato Osmosis Experiment?

We did an osmosis experiment with a potato at varying temperatures. At the lowest temperature there was no gain, at the middle temperature there was a steady gain, but at the highest temperature there was no gain. I know that with an increase in temperature we should get an increase in the rate of osmosis. At the highest temperature the potato was cooking so I'm wondering if this caused a change in the potato that affected our results. Thanks for your help!
